    Thurigian Sausage
The name is since 2004 a geografical fixed one of a thin sausage in pig´s or sheep´s guts which is seasoned with cumin, majoran and garlic. First mentioning was on a bill of a women´s monastery in 1404. The eldest recipe dates 2. July 1613 and is laid down in the national archive in Weimar.
    Recipe:
The sausages are made of thinly chopped pig´s meat, sometimes of cow´s or calves´meat without sinews. Seasoned with a mixture of cumin, majoran and garlic they get their special taste. Good butchers give tiniest ice crunches to the meat to ensure that the sausages are juicy after roasting.

I love all the German sausages - my favorite part of travelling in your part of the world. The French have sausages but not nearly the variety. And I particularly love this type on the grill in summer!

Wow, that is some historic sausage. We mostly stick to chicken sausage around here (for health reasons).

Very interesting, and I like the German sausages too. I love the top photo with the view of your table in the background.
